Our Stone Ground Flours
We are glad we opted for milling our own flour - that way we can assure you that the flour is free from visible contaminations. We only buy certified organic and biodynamic grain from single estates if possible - worlds apart from the big blending mills where the flour is milled on huge steel rollers where the flour gets hot and where vitamins and oils can therefore be destroyed. Often we meet the farmer or specify the breed of grain to keep ancient species alive. Read more on our farm of origin page - demand more!
Whole grains stored properly will last a long time - however, the minute you mill the grain the oils contained in the grain start to oxidise as they are exposed to air. We recommend you use the flour within 2-3 days (it will be milled the day before you get it) and store it in the fridge or freezer. We put a best before date of 14 days on the flour - you can of course use the flour months later - as you would flour you bought in a shop. We found that especially the gluten free flours taste bitter after a week due to the oxidised oils.
A traditional stone mill grinds at low temperature which allows the grains to retain all of their vitamins and enzymes. We mill fresh flour every day to prevent oxidation of the valuable germ oils. We have a separate mill for gluten-free flours.
