Bread Recycling Recipes using ABO bread: Date & Carob brownies 'mmmm' yummy moist dark brownies! Free from gluten, dairy, refined sugar. Only sweetened with fruit!

1cup = 100g
3 cups dates 3 thick slices of rice bread 1/2 cup carob flour 1/2 cup olive oil 1 cup of rice flour 1 cup walnut pieces Heat oven to 190-200 C Place fruit in a saucepan, cover with water, bring to boil, cover and simmer for 30 min until very soft. Switch heat off, put 3 thick slices of rice bread on top, cover and leave for 15 min.
Transfer all the above to a large mixing bowl and mix by hand, mashing it. Oil a loaf tin and sprinkle with rice flour. Transfer into oiled loaf tin
Smooth the top and bake in pre-heated oven for 25 min. Remove from tin and slice when cold
Fig/Date 'truffles' Like above recipe, except add 1 cup of blanched almonds, use food processor to mince up fine, adding a splash of pumpkin seed oil. Spread the warm mix onto an oiled work surface, cut into truffle size pieces with an oiled knife. Roll into truffles.
Fig brownies replace dates with figs (remove hard stalks) after cooking before you mash them up.
