Bread Recycling Recipes using ABO bread: Herb Crust / Stuffing / Breadcrumbs / Soup
Herb Crust Vegetables: Cut stale or fresh bread into small pieces and turn to bread crumbs in food processor. Add dried or chopped fresh herbs to bread crumbs, add a liberal dash of olive oil and whizz together in food processor. Pre-cook large vegetables like marrow or pumpkin or onion Place cooked vegetables in oven proof dish and cover with a finger thick layer of herb crumbs, bake until slightly crisp. Alternatively: Press the herbs crumbs together and fill hollowed out vegetables or mushrooms.
To thicken sauces: Add a thick slice of bread to any sauce, cook slowly to thicken sauce. Soup: Fry onion, garlic, fresh ginger golden, add bread cubes, cumin, caraway, nigella seeds and paprika, keep stirring for 5 mins then top up with stock or water and cook gently until all is soft. Add fresh chopped herbs and croutons.
