Tried & tested: gluten-free bread, by Rose Prince

In her comparison of Artisan Bread with Genius, according to Rose Genius looked like, but didn't taste like real bread and was made with potato starch, egg white, Xantham gum, sugar beet flakes and yeast. She also unsuccessfully tried to get Genius to comment on the use of enzymes. In the discussion that followed the article some users reported that Xantham gum caused them heart-burn.
