Organic Gluten-Free Tigernut Pastry / Biscuit Mix - 255g

Vegan, Organic, Gluten-Free & Nut-Free

Organic, Vegan, Gluten-Free, Nut-Free Tigernut Pastry & Biscuit Mix. No added sugar and no xanthan gum. Sieve into a bowl and simply mix with olive, flax or coconut oil and water, knead by hand into a soft dough and then roll out to make either biscuits or a pastry case.

We have replaced flour with milled tigernuts - regarded as the world´s first superfood as they were what our ancestors used to eat thousands of years ago. Now Tigernuts have made a great comeback as one of the healthiest foodstuffs on the market...

Why not try with our Chufatella a healthy organic alternative to chocolate spread.

RECIPE: Sift contents into a bowl, hold back 2 tbs for dusting work surface & tin. Rub in 1 tbs (8g) olive oil or flax or coconut oil and 9 tbs (90g) cold water, work into a soft pastry - that's it! NO NEED FOR SUGAR!
PASTRY case (23cm): Roll out to 5mm, bake blind for 15-18 minutes at 180C, fill and bake for a further 20-30 minutes.
BISCUITS: Makes about 30 small biscuits. Roll out to 5mm, cut into shapes and bake for 15 minutes at 180C. Eat as is or top with Chufatella...

    • Whole grains stored properly can last a long time - however, the minute you mill the grain the oils contained in the grain start to oxidise as they are exposed to air. We put a 'best before' date of 14 days on our fresh flour. We found that especially gluten free flours can taste bitter after 2 weeks as the oils start to oxidise. We recommend you store the flour in the fridge (or freeze it for later use) when you receive it.
